We are hiring an entrepreneurial minded leader to lead a five unit, $5.7 million retail dining operation as part of a $25 million KU Dining Services enterprise. Exemplary leadership skills are a necessity for inspiring and motivating an experienced and high potential management team.

Job Summary:

As a senior leader on a dynamic leadership staff, you are responsible for coordinating and executing the planning process for a $5.7 million retail dining budget. You will directly supervise management of 4 food courts, 4 coffee shops, 5 snack bars. Exciting opportunities exist to participate in departmental, and campus-wide special project activities, fostering relations with the University and affiliate partners. Acts as a liaison with campus partners such as Athletics and vendor and franchise partners. We are looking for someone who can display creative ideas and motivate staff to accomplish goals.

Essential Functions:

  1. Financial

  2. Build and guide a collaborative budget of $6 million to achieve overall retail budget schedules, financial targets and performance standard goals.

  3. Researches national/regional/local brand concepts and directs the development of self-branded concepts and/or licensed concept ventures. Set competitive and on trend retail pricing.

2. HR Functions

  • Craft unit and manager performance goals and HR functions. Interprets and implements the policies of the Union and University.

  • Leads training and supervising of management staff; reviews work; participates in the selection of personnel; provides staff training tools; works with HR/Managers to correct deficiencies.

  • Mentor student employees in business, leadership and operational learning.

3. Marketing

  • Builds marketing strategies for the retail division to drive sales and engage guests while working collaboratively with partners. Establishes and maintains a working rapport with University departments; acts a liaison with Athletic partners.

4. Communication

  • Drives excellent customer service experience in all locations. Crafts open communication through regular meetings and statuses for all necessary parties and departments.

5. Food quality

  • Develops and implements standards and procedures for operational efficiency with food quality. Assures retail division follows federal, state and local laws and regulations, and departmental health ordinances.

Required Knowledge Abilities & Skills:

  1. Experience in multi-unit operational management with demonstrated ability to lead and direct through subordinates.

  2. Apply knowledge to new concepts, policy/procedures and maintain a quality dining division that meets the needs of the campus community.

  3. Knowledge to drive a food production operation in accordance with accepted industry standards for purchasing, merchandising, inventory control, and cost relationships.

  4. Demonstrate ability to build professional relationships.

  5. Effectively communicate, both orally and written, in a large and complex organization.

  6. Work a flexible schedule, including evenings and weekends.

  7. Perform above average physical requirements of food service work to include stooping, bending, extensive walking and lifting up to 50 pounds when visiting locations on a regular basis.

Minimum Qualifications:

  1. Bachelor’s degree in Hotel/Restaurant Administration, Dietetics, Institutional Management, Business Administration, or closely related field.

  2. Minimum 3 years of progressive responsible management experience in institutional or commercial food operations.

  3. Minimum 3 years management on a multi-unit or multi-platform basis with financial experience related to various levels of business.

  4. Responsible for annual operational revenues of $2 million or more.

  5. Strong business, budget, marketing, and human resource management experience.

  6. ServSafe certification or equivalent.

Preferred qualifications:

  1. Masters degree in Business, Dietetics, Hotel/Restaurant Administration, or related field.

  2. Previous food service experience in a university setting.

  3. Experience in renovation projects.
