About Phyllis

Currently, I am the President for Almost-Everything-Free Enterprises and Piccola Publications. My principal product is a cookbook, The Amazing "Almost-Everything-Free" Cookbook: Tasty Solutions for Highly Restricted Diets (Copyright 2011, available on Amazon.com). My expertise is Healthy Living and how to manage a varity of health issues and allergies through diet.

I've had several careers, and find it necessary to keep reinventing myself. Whether it is responding to the economy, accommodating the needs of my family or dealing with whatever challenges life throws my way, I gain new skills and morph into whatever the circumstances demand.

I went from work in the defense intelligence arena to successful corporate executive, management consultant, college professor, behavioral therapist for special needs children and now, cookbook author and publisher. What’s next?

I believe in life-long learning, and continue to conduct research and study various fields of interest.

I was inspired to write The Amazing “Almost-Everything-Free” Cookbook in order to provide a healthy and helpful diet for my brain-injured grandson. He has benefitted from these recipes as part of an overall regimen designed specifically for him. His frightening seizures (up to 20 per hour) have disappeared, and he is now weaned off the numerous meds.

This is a one-of-a-kind cookbook, with recipes free of gluten, dairy, sugar, soy, potatoes, corn, honey, citrus and fruit. Eliminating these ingredients has been helpful to people with brain injuries, autism, epilepsy, celiac disease, diabetes and many more issues.

It is recommended by the Autism Speaks Foundation on their parent resouce page, and I have been interviewed in depth on the radio talk show, "Everyday Autism Miracles".

I hope my continued efforts in this field will help young and old to combat medical issues inflluenced by diet, and enable them to actually enjoy absolutely delicious food!

I feel that healthy eating is no longer just a fad - it’s the road to survival!
